Playing FF7 gives you a rather complete story, Crisis Core expands greatly on one aspect so it's watching it unfold from and into previous knowledge that makes it enjoyable for some , AC takes place some time after 7, and IIRC Dirge is after AC, but I've yet to play it.

Most say it's meh. Pretty much the entire corpus of sequels and prequels and whatnot are fan service to FF7 fans.

They're full of references and stuff that you wouldn't understand until you become familiar with FF7, and playing FF7 first will give you greater appreciation for certain aspects of the other materials. Generally, as long as you play FF7 first, then you should be safe. Everything else is just a suggestion. And honestly, there would be no love lost if you just ignored Dirge and AC altogether.
